Course Descriptions

Butter Cream

You are going to love learning to decorate cakes.  Think how proud you will be to make the next birthday cake for you little one or the new neighbor.  What better way to say welcome than with a beautiful cake?  What ever the event you will have the cake for it. In this course you will learn to make and color butter cream icing.  You will learn about the different icing consistencies and when each to use them.

We will talk about three different bag types, plus how to fill and close them. Then we move to tip care and storage.  There are five steps to prepare a cake for decoration.  Correct bag position and pressure control will also be covered.

We will learn to use star, round, petal, leaf and drop flower tips.  With just five different shapes you will be able to wow your family and friends! You will master the shell border, vines and stems, leaves, writing, bow, star flower, swirled flower, sweet pea, and yes, last but not least, the ROSE.

Royal Icing

You are going to learn many beautiful new flowers, and impressive icing techniques. Your cakes will bloom with more than roses from now on.  This course will be a whole new experience.  The first night, the instructor will make royal icing in class.  We will talk about icing consistency and proper storage prior to decoration.  You will learn about flower formers and templates.  There will be use of flower and lily nail.  The daffodil and poinsettia are two of the ten unique flowers you will learn to make in this course.

Fondant/Gum Paste

There is no holding you back now.  If you loved playing with play dough as a child then come relive your childhood and make beautiful cakes at the same time.  We will learn to cut and shape these dough-like icings into breathtaking flowers that look like you just picked them from the garden.  We will also do beautiful textured drapes and graceful borders.

Cake Design

This course is not for the beginner, but for those who are ready to make money while doing something they love.  We will cover cornelli lace, sotas, string work, gorgeous borders, and ruffle garland. The high light of this course will be learning to build tiered cakes.  Tiered cake assembly may be done in six ways; we will explore each one.  You must complete the butter cream icing course or have experience to take this course.
